Built in the 1700s by a noble Florentine family at the top of a hill 450 meters above sea level, since 1978 the farm has been owned by a family of Genoese origin. Great lovers of Tuscany, they have carried out a production and financial restructuring of the business, to support its relaunch while at the same time preserving the traditions of a family-run farm dedicated to the production of Tuscan organic wine and oil.

This business philosophy, based on harmonizing modern production techniques, artisanal methods, and environmental awareness, led the estate owners to pioneer organic farming in the Chianti Rufina wine production area.

On the estate, all the cultivation of grapes, olives, wheat, and other horticultural products complies with the standards of organic farming, and even the tourist accommodation facilities are designed and managed to cause the lowest possible environmental footprint both concerning water and energy consumption, and regarding waste management.

The estate produces a great variety of wines but markets them only in vintages that meet high-quality standards and satisfactorily express the true properties of the Chianti Rufina territory, in compliance with organic regulations. To ensure an optimal selection, the grapes are harvested by hand, just like they used to be in the past, and the wines are made through natural fermentation without added yeasts. On average, they contain as little as one-third of the sulfites permitted by law, with the Chianti DOCG Rosso RISERVA and the Bianco IGT Toscana Frizzante being completely sulfite-free.

Chianti Rufina Riserva DOCG

Altitude: 300 m above sea level.
Vinification:  Fermentation 15 days in stainless steel tanks, thermoregulated at 28°C/30°C

 

Colour: garnet red
Perfume: Strong bouquet with scent of red fruits and ripe cherry
Taste: extremely full-bodied complex, with final frangrancies of red fruits
Accompaniments: This red wine goes well with very tasty dishes, grilled and braised meats.

Chianti Rufina
DOCG

Production area: Pelago
Vineyard extension: 
Grape variety: 100% Sangiovese
Certified/denomination: Chianti Rufina DOCG
Altitude: 300 m above sea level
Vinification: the grapes are fermented in stainless steel tanks at a controlled temperature (28/30°C) for 10 days before racking and malolactic fermentation in stainless steel. After fermentation the wine is put into oak barrels.
Aging / Refinement: 9 months in oak barrels, has a potential ageing of 15-20 years

 

Colour: ruby red colour
Perfume: excellent persistance of smell of red fruits
Taste: ragain comes out the red fruits flavours with a little touch of different spices at the end, good persistence and very pleasant.
Accompaniments: Well suited to savoury red meats dishes in particular roasted meats.

Sparkling Brut
Rosé

Production area: Pelago

Grape variety: 40% Sangiovese, 60% Merlot

Vinification:  Manual harvest, soft pressing, fermentation in steel at a controlled temperature below 20°C, clarification, filtration 
Aging / Refinement: the grapes are fermented in stainless steel tanks at a controlled temperature (18/20°C) for 10 days. Three months in stainless steel and sparkling process made with Charmat metod.
Potential ageing: 3 years

 

Colour: pink pale, with a great limpidity.
Perfume: notes of tropical fruit, citrus, peach and bouquet of white flowers
Taste: fine bubbles, tropical fruit and good acidity.
Accompaniments: served beside delicate appetizers, but also chesses and delicatessen. It can be combined as well with seafood dishes, crabs, fish soups, and white meats

Toscana Bianco IGT

Production area: Pelago

Grape variety: 90% Chardonnay, 10% Sauvignon

Vinification: The grapes are fermented in stainless steel tanks at a controlled temperature (19/20°C) for 10 days.
Aging / Refinement: three months in stainless steel.
Ageing potential: 3 months

 

Colour: pale straw yellow
Perfume: delicate but persistent and intense, with notes of fruit
Taste: rich and dry; fine and elegant on the palate.
Accompaniments: well-suited to subtlely flavoured appetisers, seafood dishes and soups, and meat.
